This olive oil was created a few weeks ago. It is very fresh. It is antioxidant rich. It has a high available polyphenol content, 495ppm (parts per million) compared with 222ppm for most extra virgin olive oils. Its stable shelf life exceeds a year. The free oleica fatty acidity of this oil is 0.14%, the international allowance is 0.8%, the California Olive Oil Council allows 0.5%. This means that we are offering an olive oil in its most pristine state - its benefits are coming to you with as few oxidants or free radicals as possible.
This extra virgin olive oil was awarded three gold medals by the California Olive Oil Council last year. It is created by Darro Grieco - award winning California family farmer, he is the true husbandman of his soil, plants and animals. Anti-oxidants preserve the nutritional value of a food. Most people use a cheap olive oil for cooking. This is a mistake. By using an olive oil high in anti-oxidants, its nutritional value will be sustained even when heated. This oil is very low in free acidity i.e. “free radicals”.The low acidity of our olive oil enhances its stability and shelf life.Also olive oil increases “good” cholesterol and decreases “ bad” cholesterol.
This olive oil is made from Mission olives, an heirloom variety introduced to California over 250 years ago.

Mind you, its taste is different from the smooth and mild taste of the “Organic California Olive Oil” we’ve been selling for years. (The latter is made from heirloom Ascalone olives.)
This olive is alive; it is processed at a temperature that does not exceed 73-75 degrees Fahrenheit.
And, it is unpressed! It is made by grinding olives, pits and all into a paste. It goes to a malaxer where the paste is stirred slowly so that the small oil droplets condense and separate from the water. It then goes to decanter, a horizontal centrifuge, where the oil is separated from the water and husks. The oil then goes to a vertical centrifuge which further separates the oil from the remaining water.
Unfiltered - of course! We invite you to rejoice in its cloudiness of particulate matter which heightens its flavor.

A while back I found your raw organic living tree olive oil, extra virgin, in a very small store in Toronto, Ontario, Canada. I was amazed at the price but persevered and was so overwhelmed at the fantastic taste - just like spring. I can't find any other olive oil like it up here.
