Dear brothers and sisters,
Greetings! We trust that you have had a brilliant Fourth of July and are feeling rested and renewed.
We are pleased to say that recently we’ve made progress in our quest to purchase American grown products,wherever possible. We feel that it is tragic that so many foods that originated here can only be found abroad. Consider, for example, the hazelnut. Most organic hazelnuts, nowadays come from Turkey. This is telling, as the hazelnut is native to the forests of the Northwest. After a considerable search we are pleased to say that we have located a grower in Oregon.
The same holds for sunflower seeds. They are native to the States, but nowadays, nearly all come from China. Here again, after a lengthy search, we have located American grown sunflower seeds. As with the hazelnuts, the sunflower seeds we are now getting, look and taste much better.
The pumpkin too, originated here. After all, what could be more American than pumpkin pie? Yet finding American-grown, organic pumpkin seeds has proven challenging. We simply were not able to locate a source. However, we’ve gotten together with some enterprising people in Oregon and are delighted to say that the pumpkins are growing! The seeds should be ready in November.
Here’s a photo of the pumpkin patch. It’s in the Williamette Valley, in Oregon, one of the most fertile agricultural regions in the US.

Our World Mind, features an article on the serious situation involving the nuclear power plant at Fort Calhoun in Nebraska that is being inundated by flood waters. The author draws an eerie parallel with Japan:
"The unfolding situation at Fort Calhoun reads a lot like the Fukushima disaster. Officials have been downplaying the severity of the situation from the start, and yet it has only continued to get worse, despite their empty promises. First it was the fire, then the loss of power, then the establishment of a no-fly zone around the plant, then the breaking of the berm, and now the apparent flooding of various facilities with no end in sight."
Consider this yet another wake-up call to a nation that has become estranged from its roots. No one is going to do it for you; it’s up to you. In this birth time, it is up to you to teach your fellow Americans to choose life in everything they do.

I bought a jar of your regular tahini, and it immediately became my favorite. But, no longer! I decided to try your Black Tahini for its increased nutrient profile and was amazed at the flavor and creaminess of it. I've have tried other brands of both regular and black raw tahini and yours is in a class by itself. I like it especially in a smoothie made with coconut water, carob/cacao, bananas and mesquite, or one with water, ground flax, bananas and grapefruit. What a light and pleasant surprise. This cheesecake is so light and refreshing, and a great summer snack. Blueberries are loaded with rich antioxidants and because this dessert is raw, you reap the benefits in a big way! According to new studies, there is evidence that blueberries may also improve memory and cognitive functions. So enjoy this delicious dessert without guilt!
Blueberry Cheesecake
Crust
- 3/4 cup almond flour
- 3 Tbsp. almonds, soaked for 6-8 hours
- pinch of sea salt
- 1/4 tsp. cinnamon
- 1 Tbsp cacao powder (optional)
- 3/4 cup Medjool dates, chopped
Filling
- 1 1/2 cup cashews, (soaked 2 hours)
- 3/4 cup water
- 2 cups blueberries
- 1 frozen banana
- 3 Tbsp. lemon juice
- 6 Tbsp. grated cacao butter, melted
- 2 tsp coconut oil, melted
- 1 Tbsp. raw honey (or agave), to taste
- 1 tsp. vanilla extract (alcohol free) (or 3 drops Medicine Flower Vanilla Extract)
- 2 Tbsp. Irish moss paste (optional)
- 1/2 tsp sunflower lecithin(emulsifier)
- 1 1/2 Tbsp. psyllium husk powder (to thicken ,if needed)
- 1 pinch sea salt
Topping
- 1 cup blueberries
- 1 Tbsp. clear agave (or honey)
- pinch sea salt
- 1 tsp lemon juice
- 2 Tbsp shredded coconut for garnish
Preparing Crust
Add nuts to food processor until finely ground. Add dates and salt, and process until it balls up and add pulp.
Sprinkle bottom of 8" spring form pan with a bit of almond meal.
Press dough into pan, creating a very thin crust.
Preparing Filling
Put grated or shaved cacao butter along with coconut oil in a metal bowl. Either melt in dehydrator or place over a smaller metal bowl, filled with hot water and allow to melt.
Combine all ingredients except the lecithin and psyllium in a high speed blender until creamy. Add lecithin and psyllium and mix well. It should be very thick and creamy.
Spoon into crust and refrigerate 2-4 hours to allow cake to firm and set.
Prepare Topping
Place blueberries in a bowl. Gently stir in ingredients, except for coconut. Pour onto top of cake while still in pan. Sprinkle with coconut and refrigerate for several hours or overnight.
To Serve:
Gently remove cake from pan.
Store in refrigerator for 2-3 days or freeze for several weeks.
