Celebrate Electronic Pasteurization Month!

Dear brothers and sisters,

We opened up the pages of our morning paper to discover that the FDA will allow food companies to irradiate spinach and lettuce. This is of course a prelude to the irradiation of all fruits and vegetables. We were reassured to learn that the vegetables will be labeled with a delightful image of a plant in a green circle and some such phrase as “treated with irradiation”. As this might put some folks off, the food industry has been pushing to drop the symbol and use instead terms like “electronic pasteurization”. How sweet! Electronic pasteurization! What a catchy phrase! Let’s have a national Electronic Pasteurization Month! After all we’re had a war on drugs and a war on poverty and now - a war on aliveness! A brilliant,new concept! Let’s rejoice! Maybe it’s the FDA’s way of paying homage to the raw food movement!

Now imagine what the newspapers would say if “terrorists” had subjected the nation’s fruits and vegetables to nuclear radiation. Or imagine the screaming headlines, had that those same nasty terrorists fumigated the nation’s almond crop. Not that we wish to imply that the bureaucrats who regulate the nation’s food supply are anything but zealously devoted to the health of the citizenry of this great land. We would be loathe to intimate that they are overly solicitous of the interests of the Grocery Manufacturers Association. They are all honorable men, serving the public.

May we suggest that you take another swig of that raw almond-cacao smoothy and smile in the certainty that you will have the last laugh. Go out and hug your neighbor, plant a Victory Garden and form a food co-op. Life, inevitably, will triumph.

Desiree Black Sesame Pesto with Olive Oil

Here's a zesty pesto made from our organic, UNHULLED, black sesame seeds. We've added basil, thyme and our Alive Olive Oil and Royal Himalayan Pink Crystal Salt to make it satisfyingly good! Its a symphony of flavors. Use it on carrot and celery sticks and on flax seed crackers for hors d'oeuvres.

Recent studies are finding that a diet rich in macadamia nuts reduces total cholesterol, including LDL-cholesterol, and favorably modulates risk factors for coronary disease in patients with high cholesterol levels.

A dietary trial in Hawaii demonstrated that macadamia nut consumption lowered risk indicators for heart disease. And a study in at the University of Newcastle, involving subjects with elevated cholesterol levels, found that participants who ate macadamia nuts showed significant reduction in blood serum cholesterol, total blood triglycerides, LDL cholesterol, and blood clots.

A study in Japan involving young women as subjects found that after only three weeks on a diet high in macadamia nuts, the subjects revealed a significant reduction in both serum and LDL cholesterol levels. These benefits were produced with as little as a 20 gram consumption of macadamia nuts per day.

Macadamia nuts also contain a significant level of protein, comprising essential and non-essential amino acids. They are a good source of minerals so essential to a healthy diet, and so needed to maintain ideal weight. These include per 100 grams: 410 mg potassium, 200 mg phosphorus, 120 mg magnesium, and 64 mg calcium. Selenium, iron, manganese, copper and zinc are present in small amounts. Macadamias contain significant amounts of a broad range of vitamins including Vitamin E as tocopherols and tocotrienols, B1 (thiamine), B5 (pantothenic acid), B6, B2 (riboflavin), niacin and folate. They also contain phytosterols.

Macadamias improve the balance between omega-6 and omega-3 fatty acids. They also have a high dietary fiber content of approximately 7%. Dietary fiber is the term for carbohydrates that are resistant to enzyme digestion in the stomach. These consist of complex soluble carbohydrates and soluble fiber such as, hemicellulose, amylopectins, mucilage, gums and insoluble cellulose. Dietary fiber promotes the feeling of dietary satisfaction, slows digestion, promotes desirable intestinal bacteria, and keeps bowels healthy. It plays a role in reduction of cancer and diabetes risk.
Macadamias also contain the phytonutrient classes of phenolic compounds: flavonoids, phytoestrogens, phytic acid, tannins which convert to ellagic acid in the body, saponins, and lignans.

Our macadamias  are  grown  with devotion  by  a family farmers in Hawaii. They are crisp, fresh and alive!
