Dear Brothers and Sisters,
We are delighted in this issue to bring you a recipe for a
veggie burger created by master live food chef Diana Hirsch.
This is no ordinary veggie burger. It is a blend of almond
butter, walnuts, pumpkin and sunflower seeds along with living
vegetables.It lends itself to many variations including ”cheese”
burgers and spinach mushroom burgers.
Also you will find here news of our latest creation
Brazil nut, Fig, Chocolate Truffles.
As with all of our chocolates they are aromatic; aesthetically
too they are a delight. We invite you to slice one open and
contemplate the juxtaposition of a Brazil nut gathered in
the wilderness of Amazonia, surrounded by a penumbra of California
figs, the whole enclosed by our Living Tree Alive Chocolate.
These have been handcrafted here in Berkeley,a center of intellectual
inquiry and creativity.
We are continually adding articles to our World
Mind page. Recently we added an article on the latest unemployment
statistics. In December over 85,000 jobs were lost. Some forecast
that the unemployment rate will reach 10.8% by October. The
so-called underemployment rate -- which counts people who
have given up looking for work and those who are working part-time
for lack of full-time positions -- now sits at 17.3%. In other
words, over 26 million Americans are not able to earn a reasonable
living. There is not much to show for the $787 billion spending
bill that was supposedly to stimulate the economy.
Which one of us, despite so many challenges,
does not endeavor to follow a live food diet, engage in vigorous
exercise, plant an intensive garden and shop as much as possible
at farmer’s markets and natural food stores? But how
healthy can one be, if one’s livelihood is threatened
and this through no fault of one’s own? We cannot but
ask ourselves, if the time has yet arrived, if we have reached
that point in civilization, when we can, by way of right,
direct our life energy in creative, productive and soul satisfying
work that contributes to the flourishing and blossoming of
this America. Think of it! 26 million Americans are sitting
at home subsisting most likely on junk food, eyes glued to
their television sets.Instead of becoming overweight and even
obese, imagine, if they were engaged in the rebirthing of
this nation! In one year they could contribute 50 billion
hours of labor. Imagine that this collosal energy was directed
to further wellness,conviviality and aliveness! What they
could accomplish is limited only by your imagination. For
example, in place of “health care” there could
be healing, in place of “factory farms” family
farms and in place of “schools”, homeschooling
and learning exchanges.

Alive Nutty Seed
Veggie Burger!

- ½ cup Living Tree Community Almond Butter
- ½ cup Living Tree Community Walnuts, Soaked
8 hours or overnight, dehydrated
- ½ cup Living Tree Community Pumpkin Seeds
, Soaked 8 hours or overnight, dehydrated
- ½ cup Living Tree Community Sunflower Seeds,
Soaked 8 hours or overnight, dehydrated
- 2 cups Cabbage, Shredded
- ½ cup Carrots, Shredded
- ½ cup Beets, Shredded
- ½ cup Spinach, Chopped/Packed
- ¼ cup Onion, Diced
- 1 tsp Garlic, Pressed
- 2 tsp Poultry Seasoning*
- 1 tsp Himalayan Salt
- 6 tbsp. Living Tree Community Golden Flax Seeds,
Ground
Please note: All nuts and seeds measurements are
before soaking, and dehydrating. Vegetable measurements
are after shredding and dicing.
- Pulse walnuts, pumpkin seeds, and sunflowers seeds
all together in the food processor with the S-blade
until nuts and seeds are chopped. Be careful not to
over process and turn into powder! Place in large
bowl.
- Individually shred or process each of the following
vegetables; measure and put each item in bowl with
nuts and seeds as you finish: Shred cabbage, carrots,
beets, in food processor with shredding blade. Pulse
spinach in food processor with S-blade until you have
reached a nice small shred. Do the same with the onions
in the food processor until you reach a small dice.
- Add garlic, poultry seasoning and salt, mix. Add
almond butter and mix again, you will need to do this
with your hands to get everything blended well. Add
golden flax, and integrate until throughly blended.
- Scoop 1/3 cup of mixture and place on teflex lined
dehydrator sheets. Shape into patties that are about
1/4 inch thick. Dehydrate at 115 degrees for approximately
1 hour, then remove the burgers from teflex lined
sheet, flip and place on unlined dehydrator trays.
Dehydrate for another 3 hours. Serve on lettuce leaves
garnished with sprouts, sliced avocados, and tomatoes.
*Please note, Poultry Seasoning is
a Vegan seasoning. It is sage, thyme, onion, marjoram,
black pepper celery seed and cayenne. You can find it
in the spice aisle of your favorite health food store.
The brand I am using is Simply Organic.
Variations: This versatile burger can
be made by using different ingredients in your recipe:
Experiment with your own creations or try:
“Cheese” Burgers:
Add two tablespoons of Nutritional Yeast
Spinach Mushroom Burgers:
Add 1/2 cup more chopped spinach along with 1/2 cup
diced mushrooms
Nutty Burgers can also be crumbled and
used as taco meat inside a lettuce wrap or your favorite
raw tortilla |

This morning it was bitterly cold! I had
a really hard time getting out of bed and I have to
say, it wasn't easy. During the winter months it is
so hard to stick with the schedule that you have in
the warmer months. I can remember during the Spring
and Summer months that I would get up a hour before
I had to wake to go for a nice neighborhood walk. I
couldn't imagine doing that now. I keep telling myself
though....three more months...three more months...I
am NOT a lover of cold weather. I am a spring/summer
girl. Always will be.
What I do love though is the colder weather
foods! I love to wake up and know that a bowl of hot
oats or a nice warm omelet. When the alarm went off
this morning, I didn't want to get out of bed. In fact,
I laid there for a few minutes and actually had to get
myself a little pep talk to get me going. This was in
mind.
1/2 cup of organic oats, unsweetened almond
milk, stevia pack and ALMOND (aka freedom butter). I
got a wonderful package in the mail from the Living
